Would you really fly off instantly if you have two 6374 motor? yeah it has a really strong power to move the board instantly but if you limit the motors performance to a friendly/safe settings would that be a problem?
Yes, of course it possible to stand on it 
But it may take some time to get used to the trigger

dual 6374 on a 29” will throw you off I have a hard time staying on my 29” board with a single 6364
