Stormcore 60d single motor

Hello all, I am building a board with a 12s4p battery and single 6380 but will upgrade to dual 6880 soon so I want to just go ahead and buy a stormcore 60d. Would it work to use one motor with the stormcore 60d and then get the second motor? If not is there any single motor esc/vesc that y’all would recomend?
